Banana Nut Bread

Ingredients

  • 2-1/2 cup flour
  • 1-1/4 cup sugar
  • 2 pkg (3.4 oz ea) instant vanilla pudding
  • 1-1/4 tsp bkg soda
  • 1 tsp salt
  • 2 tsp ground cinnamon
  • 1 tsp ground cloves
  • 5 eggs
  • 2 cups mashed ripe bananas
  • 1 cup veg oil
  • 1 tsp vanilla extract
  • 1 cup chopped nuts (pecan or walnut)
  • I cup raisins

Preparation

Step 1

Combine first seven ingredients in large bowl. In mixing bowl beat the eggs, bananas, oil and vanilla. Stir into dry ingredients just until moistened. Stir in nuts and raisins. Put in two greased 8 X 4 X 2 inch loaf pans. Bake at 350 degrees for 55-65 min or until an inserted toothpick comes out clean. Remove from pans after 10 minutes
