Crockpot Italian Beef

Ingredients
- 3 to 3/12 pound eye of round roast
- 1 16 oz jar peperoncini
- 1 envelope Good Seasons zesty Italian salad dressing mix

Step 1
Place roast in your crock pot and drizzle the juice of the peppers over the top and down the sides. Rub the dry salad dressing mix into as much of the surface as possible. Arrange the peppers around the sides. Cook on low heat 6 or 7 hours Let the roast rest for twenty minutes or so before you attempt to slice. Wonderful main dish with your choice of veggies. Freeze the leftovers in the juices and this is another meal or two, plus it makes wonderful sandwiches on a moments notice. Slice thinly and serve on toasted rolls or Italian Bread. Sometimes I make it just for sandwiches if I am expecting a bunch. Bon Appetit'!
