Ingredients
- 2 boxes Jiffy Corn Muffin Mix
- 1/2 c Sour Cream
- 3 Eggs, beaten 1/2 c Butter, melted
- 1 tsp Salt
- 16 oz can Cream Corn
- 1/2 c Buttermilk
- 2 tblsp Shortening
Preparation
Step 1
Mix all ingredients, set aside. In a cast iron skillet, melt shortening over med-high heat. Once shortening is melted, pour corn mixture into skillet and cook until browned on bottom, about 1-3 min. Place skillet into oven and bake at 350 for 20-25 min. Slice and serve.
