Ingredients
- For Parmesan Friso Cup
- 1 1/2 cups grated Parmesan
- For Citrus Vinaigrette
- 1/4 cup extra virgin olive oil
- 1 Tbsp lemon juice
- 1 Tbsp orange juice
- 1/2 tsp lemon zest
- 1/2 tsp orange zest
- 1 tsp honey
- 1/2 tsp Kosher Salt
- 1/2 tsp Pepper
- For Spinach
- 6 ounces baby spinach leaves
- 1 orange cut in segments or 1 can Mandarin oranges
- 1/3 cup sliced almonds toasted
- 1/2 red onion, thinly sliced
Preparation
Step 1
Oven to 375
For Parmesan
Place Silpat mat on baking sheet. Put mounds of cheese tapped down on sheet. Bake 8 to 10 minutes. Cool until firm.
For vinaigrette
Combine all in jar and shake.
For spinach salad
Combine all ingredients, drizzle with vinaigrette and toss.
Divide salad on top of Parmesan and serve.
