  • 2 chicken breasts
  • Olive Oil
  • coarse salt and pepper
  • thyme
  • 1 1/2 lbs. Yukon Gold potatoes salted and boiled
  • 2 large shallots diced small
  • 2 garlic cloves minced
  • 1/2 lb. spinach

Preparation

Step 1

Use leftover chicken and cut into bite size pieces.

Heat 4 tsp. oil over med.-high. Add the shallots and cook stirring until softened, about 3 mins. Add garlic and cook 30 seconds. Add potatoes and cook, stirring often, until browned, 7 minutes. Add 2 Tbs. water, scraping up bits with a wooden spoon. cook, stirring often, until potatoes are golden brown, 5 mins. Add chicken and spinach. Season to taste with salt and pepper.
