Ingredients
- 200 g Fish
- 3 cups Crushed Tomatoes
- 4 Tbsp Onion
- 3 Cloves of Garlic, crushed
- 1/4 cup Vegetable Broth
- 1 Bay Leaf
- 1/8 tsp Old Bay Seasoning
- 1/8 tsp Thyme
- 1/8 tsp Basil
- Salt & Pepper to taste
Preparation
Step 1
In a deep-sided pot, heat the broth to boiling and add garlic and diced onion and cook until tender.
Add fish portions and cook with onions and garlic until fish is cooked and flakey.
When the fish is at the flake stage, add tomatoes to the pot, along with all spices. Bring just to a boil, then reduce heat and simmer. Simmer for at least 5 minutes to get flavours to meld well. Simmer longer for better flavour.
