Pancetta Crisps with Goat Cheese and Pear

Ingredients

  • 16 thin slices pancetta
  • 16 tsp from goat cheese
  • 2 very ripe pears, halved, cored and cut into 1/4 inch thick slices
  • thyme leaves

Preparation

Step 1

Preheat oven to 450. Place pancetta slices in a single layer on large rimmed baking sheet. Sprinkle with pepper. Bake til golden, about 10 min. Using a spatula, slice pancetta crisps onto platter. Top each with 1 tsp goat cheese and 1 pear slice. Sprinkle with thyme. and serve. Makes 16

Option: Put in pancetta in mini muffin tins to make cups.
