Spaghetti sauce without meat

Ingredients

  • 1/4 c Extra Virgin Olive Oil
  • 1 large white onion, chopped
  • 2 tbs minced garlic
  • 1/2 c red cooking wine
  • 3 TBS basil chopped
  • 1 TBS Chicken bouillon
  • 2 tsp Italian Seasoning
  • 1 tsp Parsley flakes
  • 1 tsp Black pepper
  • 1 tsp oregano
  • 1/2 tsp fennel seed
  • 1 28 oz can crushed tomatoes
  • 1 8 oz can tomato paste
  • Salt to taste
  • 1 lb whole wheat pasta

Preparation

Step 1

Heat oil in 3 qt pot.
Add onion and garlic. Cook until onions aretranslucent (Approx 15-20 minutes).
Add wine, basil, bouillon, italian seasoning, parsley, pepper, oregano, and fennel. Reduce until wine is half original amount, stirring occasionally (approximately 15-20 minutes).
Add crushed tomatoes and tomato paste. Simmer until ready to eat, but at least 2 hours for best flavor.
Cook pasta according to package directions.
Place pasta in bowls. Top with sauce, parmesan cheese, parsley flakes for garnish. Serve with garlic bread.
