Tobouli Salad by Jimmy

There are a lot of Tobouli Salad variations on the web but our friend Jimmy has kept his nice and simple. This is light and delicious. Great on any day as a salad or as an appetizer. We love it on a Hot Summer day with flour tortilla's and just tear off small pieces and scoop up pinches of this green delight!
He also found this wonderful little orange Copco Cutter that fits in the palm of your hand to make the chopping easy! (Walmart and Amazon.com)
Make sure you thoroughly RINSE the Parsley and Cilantro before chopping, even if you think it is clean. It can have sand sometimes and gritty tobouli is NOT fun!

Ingredients
- If you would like to add other items you can do the following to be more traditional:
- 5 Bunches Fresh Parsley- Chopped Fine
- 2 Bunches Fresh Cilantro- Chopped Fine
- 3 Lemons- Juiced
- 2 cloves garlic- minced
- Kosher Salt/ Pepper to taste
- Nature Seasonings and Tony Chachere’s Creole Seasoning to taste- (Optional-we do this- we like it a little spicier.)
- 3/4 to 1 Cup Extra Virgin Olive Oil (+/-)
- Optional- Red Onions chopped (we don’t use)
- Optional- Sesame Seeds (we don’t use)
- Optional- Grape tomatoes chopped (we don’t use)

Step 1
Mix thoroughly together and let sit to chill at least 1 hour before serving.
Serve w/ Large Flour Tortilla Shells- we use Mission or Chi Chi Brand Burrito Size Flour Tortilla’s
