Ingredients
- 8 chicken thighs with skin and bone
- 2 onions - chopped
- 1 - 14.5 oz can diced jalepeno tomatoes
- 2 tbs paprika
- 1 1/2 cup uncooked rice
- 3 + cups water
- red pepper flakes - to taste
- oil
Preparation
Step 1
Skin chicken.
Saute onion in oil until clear.
Add tomatoes, paprika and red pepper flakes. Stir well.
Add chicken and mix well.
Cover and cook on low heat for 50 minutes. Stirring intermittently.
Add rice and water. Re-cover and cook for 20 minutes until rice is done.
