Chicken Empanadas

Ingredients
- 3 cups cooked chicken
- 1 package shredded Colby Monterey Jack cheese
- 4 ounces cream cheese
- 1/4 cup red bell pepper
- 1 jalapeno
- 1 tbsp ground cumin
- 1 1/2 tsp salt
- 1/2 tsp pepper
- 1 package refrigerated pie crusts
- Water

Preparation
Step 1
Preheat oven to 400 degrees F
Grease baking sheet
Combine chicken and all other ingredients
Unroll 1 piecrust, roll into 15-inch circle
Cut out rounds, 3-inch (repeat)
Lightly brush edges with water
Place 1 tsp of chicken mixture in the center
Fold and press edges with a fork
Bake for 15 minutes
