Turnips & Turnip Greens

Ingredients

  • 1 lbs Turnip Greens (wash, rinsed well and chopped)
  • 2 med size turnip roots, peeled and diced
  • 2 c. chicken broth
  • 1 1/2 cups of onion, bell pepper, and celery, chopped
  • 1 clove garlic, minced
  • 1 tsp salt
  • 1/2 tsp sugar
  • 1 lb link sausage of choice, sliced

Preparation

Step 1

Cook sausage in a skillet. Drain, cut-up and set aside.

Begin by pouring 2 tablespoons fat from the seasoning meat or oil in a stock pot. Saute the vegetables for 3 minutes. Pour in chicken broth. Add diced turnip roots. Bring to a boil. Cook 10 minutes.

Add the turnip greens, salt and sugar. Place sausage on top. Cover and lower the heat to medium. Cook for another 10 minutes or until turnip root is tender.

Serve in a bowl withs sausage on top and cornbread for dipping.
