Ingredients

  • 4 tablespoons no salt added tomato paste
  • 4 tablespoons water
  • 4 teaspoons red wine vinegar
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon Creole mustard
  • 1/4 teaspoon dried thyme
  • 4 (4-oz.) boneless loin pork chops, trimmed of all visible fat
  • 2 teaspoons Cajun seasoning

Preparation

Step 1

Preheat indoor or outdoor grill to MEDIUM. In a small saucepan, whisk together first 6 ingredients (tomato paste through thyme); set aside. Rub both sides of pork with Cajun seasoning; grill 4 to 5 inches from heat source for 4 minutes or until seasoning browns; brush with tomato sauce. Grill for 1 minute; turn. Grill for 3 minutes; brush with sauce. Grill for 1 to 2 minutes or until pork chops are slightly pink in the center. Bring remaining tomato sauce mixture to a boil; serve over pork chops.

SERVING SUGGESTION: Steamed kale and baked Sweet potatoes (nuke in microwave to keep your kitchen cool).
GLUTEN FREE: Make sure tomato paste, vinegar, Worcestershire sauce, mustard and Cajun seasoning are gluten free.
