Soft Honey Cookies - Mom

Ingredients

  • 2 eggs, well beaten, 1 c honey, little salt, 1 t anise extract, 1 c sugar, 1 1/2 t soda dissolved in a little hot water. Add about 4 c flour until quite stiff. Roll in balls about size of walnut. Can be frosted or eaten plain.

Preparation

Step 1

Frosting: soak 1 pkg gelatin in ¾ c cold water, add ¾ c white sugar. Pinch of salt. Bring to boil and simmer 10 minutes. Watch close and stir. Then put in ¾ c powdered sugar in large bowl and pour syrup over slowly. Beat until foamy. Add ¾ t baking powder, beat until very stiff. Add 1 t vanilla, 4 drops anise.
No shortening in cookies.
