Chicken Caprese

Ingredients
- 2 6 to 8oz chicken cutlets, pounded thin
- 1/4 cup extra virgin olive oil, plus some for drizzling
- 1/4 cup balsamic vinegar
- 1 vine-ripened tomato, cut into thick slices
- 1 ball fresh mozzarella, cut into thick slices
- 24 leaves fresh basil, chopped
- salt and pepper

Preparation
Step 1
Preheat grill to medium heat
Season chicken with salt and pepper. Drizzle with olive oil and balsamic and place on grill. Cook for 2-3 minutes on each side. Take off grill and place on 2 dinner plates. Top with tomato and mozzarella slices, and garnish with basil, a drizzle of olive oil and salt and pepper
