- 1/2 c peanut or any nut butter
- 3/4 tsp baking soda
- 3 Tbsp whole-wheat pastry flour (or white or a gluten free mix)
- 1/4 c white sugar
- 2 Tbsp brown sugar
- 2 Tbsp applesauce
- 1/2 tsp pure vanilla extract

Step 1
Preheat over to 350
Mix dry ingredients very well. Then add wet ingredients and form cookie balls and place on a cookie sheet, flatten with a fork. If you want soft cookies, refrigerate the dough for at least an hour. Then bake for 8 minutes, they'll look underdone when you take them out but that's OK. Let cool for at least 5 minutes before removing from the tray.
