Easy Cajun Roasted Turkey Breast- Crock Pot Style (Injected optional)
By hcardall
I was looking for a tasty easy way to cook a Turkey Breast indoors, when I didn't feel like pulling out my Turkey Fryer. I decided to go ahead and make my injector marinade, and let it be the liquid in the crock-pot, instead of water or whatever else other put in.
It was delicious! I must admit... I could not resist injecting it at the last minute, since this marinade recipe made plenty, but.. you don't really need to inject it, if you don't have the tools to do so. This was So Easy, and So juicy and Delicious! The marinade gave it the carmel color and a little bit of a crisp, but mostly color.

Preparation
Step 1
Directions:
Make sure your turkey is COMPLETELY THAWED!
To make the marinade: Combine all of the ingredients in a food processor or blender and process for about 5 minutes.
Pour ½ cup of the mixture into a measuring cup, then pour into the bottom of a small crock pot.
Remove gravy packet from turkey and set aside.
If you would like, pour some of the remaining marinade into a meat injector/ syringe and inject the turkey breast 3 or 4 times, being careful not to go all the way through the sides.
Carefully place the turkey breast into the crock-pot skin side up. Sprinkle top with kosher salt, fresh ground pepper, and Tony Chachere Cajun Shake/ Creole Seasoning.
After approx 2 hours, gently baste the turkey with the juices, while cooking, if possible. This will help flavor and give it a nice carmel color as well.
If you want to eat in 4 hours- place crock-pot on high. If you want to eat in 7 – 9 hours, put crock-pot on low.
If crock-pot is on low, the internal temp must reach 140 degrees by 4 hours.
The center internal temperature of the turkey breast needs to be 170 degrees when meat thermometer is inserted, to be done properly.
