Ingredients

  • Sauce:
  • 6 skinless chicken breasts
  • very thin slices of ham (enough to cover all breasts)
  • 1 tsp paprika
  • 1 tsp garlic salt
  • 2 Tbsp oil
  • 1 Tbsp butter
  • 1 med. onion
  • 1 can tomato paste
  • salt & pepper to taste
  • 1 cup water
  • red pepper to taste
  • Mozzarella cheese
  • Parmesan cheese grated

Preparation

Step 1

Beat each chicken breast with tenderizing hammer. Salt and pepper, then toss in flour until well coated. Brown in heated oil, then place in cooking tray side by side.


For sauce:
Cook all ingredients except cheese slowly until very thick.

When ready to serve, put small thin slice of ham on top of chicken. Ladle sauce on top of each breast until thoroughly covered. Top each breast with thick slice of Mozzarella. Place in 325 oven until hot and cheese is melted.

Serve and sprinkle with Parmesan cheese if desired.
