Two Cheese Rotini

Ingredients
- 1-1/2 lb Italian sausage, sliced 1/2" thick
- 1 c chopped green pepper
- 1 Tbsp olive oil
- 1-1/2-2 jars spaghetti sauce
- 15 oz ricotta cheese
- 1 box rotini pasta, cooked and drained
- 1-1/2 c mozzarella

Step 1
In a skillet cook sausage and green pepper in hot oil over medium heat until browned; drain well. Add spaghetti sauce.
Combine ricotta, rotini and 1/2 c mozzarella cheese. Stir gently to blend. Spoon 1/2 of pasta mixture into a lightly greased baking dish.
Top with 1/2 of sauce mixture. Repeat layers. Cover. Bake at 350 for 25 minutes; uncover, sprinkle with remaining mozzarella cheese and continue baking for 5-10 minutes or until cheese is melted.
