Ingredients

  • To Build Up: Add 1/4 cup flour and 1/2 cup warm water. Set out until morning, top on loose; then refrigerate.
  • Pancakes: Night before: take out 1 cup starter. Add 2 cups warm water and 2 1/2 cups flour. Set out overnight with plate on top.
  • Next Morning: Return 1 cup to starter. Add 1/4 cup evaporated milk, 2 eggs, and 2 Tbsp oil. Mix. Fold in 1 tsp baking soda, 1 tsp salt, and 2 Tbsp sugar.
  • Waffles: Increase oil to 1/2 cup.
  • For 6 People: Increase starter to 1 1/2 cups, 3 cups water, 3 3/4 cups flour, 1/4 & 1/8 cup evaporated milk, 3 eggs, 3 Tbsp oil, 3 Tbsp sugar, 1 1/2 tsp salt and baking soda.
