Pesto-Mozzarella Dippers

Ingredients
- 8 Slices Crusty Italian Bread, 1/2-in. thick
- 4 Tbsp. Unsalted Butter, softened & divided
- 8 tsp. Jarred Basil Pesto ( or Fresh Basil-Parsley Pesto-under"Sauces" )
- 6 oz. Fresh Mozzarella, sliced & divided

Step 1
Spread butter on one side of each slice of bread; spread 1 tsp. pesto on the other side. On 4 of the bread slices, arrange the cheese on the pesto in a single layer. Cover the cheese with the remaining bread slices, buttered side up. Heat a non-stick griddle or skillet over med. for 2 min. Grill sandwiches 2-3 min, or till golden underneath. Turn sandwiches, press firmly with a spatula & cook 2-3 min. more, or till bread is toasted & cheese is melted. Turn once more, press & cook 30 sec. Remove from heat & let stand 3 min. so cutting is easier.
