Ingredients
- 2 Tbsp Extra-virgin olive oil
- 3 cloves garlic, minced
- 1 medium onion, diced
- 1/4 c celery, diced
- 1/2 c carrots, diced
- 3 Tbsp barley, rinsed
- 3 c water
- 1 can pinto beans
- 1 can black beans
- 1 can kidney beans
- 1 can Navy beans
- 1 can Garbanzo beans
- 1 c sweet corn, fresh or frozen
- 1 can diced tomatoes with roasted onion
- 1/2 tsp dried basil
- 1-1/2 tsp crushed bay leaf
- 1 tsp sea salt

Preparation
Step 1
Heat oil in a soup pot, saute garlic and onion until the onion is translucent. Add water, celery, carrot, and barley, beans, corn, tomatoes and herbs.
Add salt, cover and simmer 30 minutes.
Serve.
