Ingredients

  • ◦5 pickling cucumbers
  • ◦1/2 cup cider vinegar
  • ◦1 cup water
  • ◦5 packets sugar substitute (10 teaspoons)
  • ◦1 1/2 tablespoon dill seed
  • ◦1 tablespoon mixed pickling spice

Preparation

Step 1

Combine all ingredients except for cucumbers in a saucepan. Boil for about 10 minutes. Cool to room temperature.

Wash and slice cucumbers into a 1 quart size jar. When liquid is cool, strain and pour over cucumbers. Cover tightly and refrigerate at least over night for a good flavor. If "brine" doesn't cover all the cucumbers, simply turn the jar over every couple of hours. Makes a very crunchy dill pickle.

Although vinegar is a preservative I would think the refrigerator life on these would be somewhere about a month.
