Asian Ahi Tuna with Kale and Red Peppers

Ingredients

  • 2 Ahi Tuna Steaks
  • Marinade
  • 1/4 cup olive oil
  • 1/4 cup red cooking wine
  • 1/4 cup water
  • 3 T. low sodium soy sauce
  • Juice of a lime
  • 3 cloves garlic, minced
  • 1 t. pepper
  • 3 T. fresh grated ginger
  • Kale and Red Peppers
  • 2 T. olive oil
  • 2 red bellpeppers, seeded and sliced
  • 1 head of kale, stems removed and chopped
  • 1 large shallot, minced
  • 2 cloves garlic, minced
  • 2 t. Chinese Five Spice
  • salt and pepper

Preparation

Step 1

Mix all marinade ingredients. Place tuna steaks in a sealable bag. Add marinade, seal and let sit for about 30 minutes.

Sear tuna steaks on each side (best served rare but cook to your liking).

In a large pan, heat olive oil on medium heat. Add the shallots, garlic, kale and peppers. Stir and add seasonings. Cook until peppers begin to soften.
