White Chili with Tempeh

Ingredients
- 8 oz. tempeh, cut into 1-inch cubes
- 1 1/2 cups chopped onion
- 2 cloves garlic, minced
- 1 3/4 cups vegetable broth
- 2 tsp. minced fresh ginger
- 3 cups sliced mushrooms
- 1 tsp. ground cumin
- 1 1/2 tsp. chili powder
- 1 can navy beans
- 1 cup chopped green bell pepper
- 1 cup chopped red bell pepper

Step 1
In large saucepan over medium heat, cook tempeh, onion, and garlic in 1/2 cup vegetable broth, stirring occasionally, until onion is soft and liquid has evaporated, about 10 minutes. Mix in remaining broth and remaining ingredients; simmer 15-20 minutes. Add additional broth as necessary. Serve over rice.
