Ingredients
- 1 lg head cauliflower, cut into florets
- 1 red onion, cut into lg pieces
- 4-5 garlic cloves, halved
- 1 tbs fresh ginger, minced
- 2 tbs olive oil
- 1/2 tbs curry powder
- 1/2 tbs garam masala
- 1/2 tbs fennel seeds, mostly crushed
- 1 tsp salt (to taste)
- Pepper
Preparation
Step 1
Preheat oven to 400 degrees. In a large roasting pan, combine cauliflower, onion, garlic, and ginger. Drizzle with olive oil and toss well. Add spices and mix well until evenly coated. Place in oven and bake for about 30 minutes, depending on size of florets. Stirring every few minutes, checking for doness of florets, to your liking. Remove from oven and serve.
