Mayonnaise: Basil

This is excellent on salmon as a sauce, it can be thined out if preferred with a little half n half or cream. This is also good on sandwiches, or burgers and fish burgers or as a sauce with french fries.

Ingredients
- 4 egg yolks [MAKE SURE ROOM TEMPERATURE]
- 6 tbs. fresh lemon juice
- 1 tsp garlic minced
- 2 tbls salt
- 2 tsp pepper
- 2 cups vegetable oil
- 1 cup olive oil
- 1 cup basil leaves

Preparation
Step 1
In a food processor place everything but the basil and oils. Blend thoroughly. While processor is on, in a slow drizzle add vegetable oil, and same way add olive oil, then add basil leaves. Store in refrigerator.
