Preparation

Step 1

Toast bread. Cut lettuce leaves in half crosswise and form into 8 neat stacks. On a clean work surface, arrange 3 bread slices in a row; spread with 1 tablespoon mayo on one side then top with a lettuce stack, 2 tomato slices; salt and pepper to taste, 2 bacon slices (broken to fit) and 1/8 of the turkey; salt and pepper to taste. Repeat with second slice of bread, carefully placing the second layered bread slice on top of the first layered slice, turkey side up. Cover with the third bread slice, mayo side down. Pin sandwich layers together by piercing them with 4 toothpicks through the top bread slice, in 4 places in a diamond-shaped pattern, all the way to the bottom bread slice. Repeat the process with remaining ingredients to form 3 more sandwiches. Cut each sandwich diagonally into 4 triangular pieces, each secured by a toothpick in the center.
