Christmas Lasagna

Ingredients
- MEAT FILLING:
- 3/4 lb ground sausage
- 3/4 lb ground beef
- CREAM SAUCE:
- 1/2 C Butter
- 1/2 C Flour
- 4 C Milk
- CHEESE FILLING:
- 1/4 C sun-dried tomatoes (packed in oil, minced)
- 1 Tbl Fresh Garlic (minced)
- 3 1/2 C Ricotta Cheese
- 3 Eggs
- 1 C Parmesan Cheese (grated)
- 1/2 C Romano Cheese (grated)
- 1/2 tsp Salt
- 1 tsp Black Pepper
- OTHER:
- 4 C Mozzarella Cheese (shredded)
- 2 boxes Lasagna noodles
- 2 jars Marinara Sauce
- Extra Parmesan Cheese (freshly grated)

Preparation
Step 1
1. Brown ground sausage and ground beef together in skillet; after meat is cooked, mix with 3/4 jar marinara sauce (less or more sauce can be added depending on desired sauce amount - I tend to use less)
2. While meat is cooking, melt butter with medium heat in heavy saucepan
3. Add flour and stir until well blended; cook until frothy
4. Add milk, stirring constantly with wire whisk as mixture comes to a simmer
5. Cook and stir until thickened (3-4 minutes)
6. Chill while mixing other ingredients
7. Drain and mince tomatoes and garlic
8. Place other cheese filling ingredients in 3-qt mixing bowl with tomatoes and garlic
9. Add 1 1/2 cups of cooled cream sauce and mix until well blended
10. Refrigerate, reserving remaining sauce for later use
11. Cover bottom of 9x13x2 lightly oiled baking dish with marinara space
12. Place lasagna noodle* on top of sauce, overlapping slightly
13. Spread 1/2 of meat mixture over noodles
14. Spread 1 1/2 cups cheese filling over meat mixture
15. Sprinkle with mozzarella cheese until lightly covered
16. Repeat pasta, meat/sauce and cheese layering; top with lasagna noodles
17. Spread 1/2 cup of reserved cream sauce over top and sprinkle with more mozzarella cheese. Cover lightly with foil
18. Preheat oven to 350 and bake for 1 hour 10 minutes
19. Remove foil and cook for 10-30 minutes (to brown top layer of cheese). Cook time will depend on oven and your desired "doneness" on top layer of cheese.
*Don't pre-cook noodles & don't need to buy special noodles.
