Ingredients

  • 2 T olive oil
  • 2 T butter
  • 1 med. chopped onion
  • 1 lb. ground beef
  • 1 med. eggplant diced
  • 1 garlic clove mashed
  • 1 c. chopped carrots
  • 1/2 of diced celery
  • 1 lg. can tomatoes
  • 2 cans 14oz. beef broth
  • salt & pepper
  • 1 t. sugar
  • 1/2 t. nutmeg
  • 1/2 c. salad macaroni
  • 2 T. parsley (added the last 10 mins of cooking time)
  • Grated parmesan cheese or sour cream to use as topping

Step 1

Saute onions in oil and butter, add meat and brown. Add eggplant,l veggies and spices.Simmer 40 mins. Add macaroni and parsley. Simmer 10 minutes more. Top with favorite...cheese or sour cream.
