Crawfish Etouffee

Ingredients
- 1 lb Crawfish Tails
- 1 can Rotel Tomatos (diced)
- 1 can Cream of Mushroom Soup
- 1 Onion*
- 1 Bell Pepper*
- 1 Celery Stalk*
- 1 stick of Butter or Margarine
- *You can use frozen chopped veg.

Preparation
Step 1
In a 5 qt. pot melt Butter and add chopped veggies and saute. Add Rotel and Cream of Chicken soup. Add 1/2 cup of water. Let this cook down for about 30 minutes.
Add Crawfish and cook for 30 minutes.
Add seasoning to taste and serve with rice.
