The open-faced herring sandwiches with cucumbers and lettuce are perfect starters or self-dish for light dinner.

Ingredients

  • 5 slices rye bread
  • 1 cucumber
  • 10 pieces of pickled herring fillets (I use store-bought)
  • 10 lettuce leaves
  • 4 oz (100g) butter
  • 2 garlic cloves

Preparation

Step 1

Melt the butter in a small pot over a low heat.
Press the garlic cloves and add them to the hot butter.
Cut the bread slices in halves diagonally and pour the butter with garlic on them (1 teaspoon per half).
Place them on a big plate arranged in a circle. Set aside.
Cut the cucumber in rounds about 2 mm thick.
Put all the ingredients over the buttered bread slices in the following order: lettuce leaves, cucumber rounds, herring pieces.
