Ingredients

  • Fresh beets, enough to fill a 5 quart dutch oven
  • 2 cups vinegar
  • 4 cups beet juice
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 tablespoons pickling spice(in cloth
  • bag)
  • 1 teaspoon salt

Preparation

Step 1

Beets:
1. Trim beets, leaving roots and 1 inch top to prevent bleeding.
2. Cook until tender.
3. Drain and save the cooking liquid.
4. Slip off skins, roots and tops.
5. Chunk, slice or leave whole if small enough

Brine:

Boil all ingredients.

1. Add beets; boil 8 minutes.
2. Remove spices.
3. Pack in sterilized jars and seal in hot water bath for
10 minutes
