
Ingredients
- 3 cups regular rolled oats (may use quick oats, but not as good)
- 1 cup shredded sweetened coconut
- 1 cup coarsely chopped almonds or walnuts or pecans or a mixture of all
- 1/4 cup flaxseed (whole or ground)
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/4 cup brown sugar
- 1/2 cup honey
- 1/4 cup vegetable oil
- 1 tsp vanilla
- Dried cranberries

Step 1
Combine all dry ingredients in a 13X9 inch glass baking dish. May add other ingredients (pumpkin spice, sunflower seeds, pistachios, etc.) as desired.
Mix together the honey, oil and vanilla. Pour over the dry mixture and blend together.
Place in oven at 300 degrees until light brown, 45 to 50 minutes, stirring every 10 to 15 minutes.
Remove from oven, may stir in dried cranberries at this time. Continue to stir mixture every few minutes to prevent lumping.
