Atchara (Philippine Sweet Pickled Vegetables)

A traditional Philippine pickle usually paired with BBQ chicken or pork.
Classically the main ingredient is green papaya or hearts of palm but well rinsed and drained sauerkraut is a good substitute

Ingredients
- 1.25 c. cane vinegar
- 1.25 c white (table) sugar
- 2 lbs, sauerkraut, rinsed, drained & squeezed dry
- 1 2" knob of ginger peeled and cut into slivers
- 1 small red bell pepper, cut into matchsticks
- 1 small onion, sliced thinly
- 4 whole black peppercorns

Preparation
Step 1
1) Measure the vinegar and sugar into a saucepan big enough to hold everything and bring to a boil
2) Lower the heat and add everything else
3) Simmer covered for an hour
4) Cool and transfer to sterilized jars. This pickle will keep for about a month if refrigerated
