Mushroom Barley Soup

Ingredients
- 1 Tbs oil
- 2 med. size yellow onion,diced
- 1 lb fresh white mushrooms slice
- 4 carrots,cubed
- 4 stalks celery,sliced
- 2 parsley roots,cubed
- 1 clove garlic,crushed
- 1 cup barley
- salt and pepper to taste

Preparation
Step 1
Heat oil in a 6 qt.pot. Saute onions and mushrooms for 5 min. Add carrots,parsley root and celery. Continue to saute until soft about 10 min. Add barley,pepper and salt. Add 4 quarts water or until the pot is about 3/4 full. Cook for 2 hrs over low flame. Taste and adjust seasoning before serving.
