Ingredients

  • 2 Cups Smooth Peanut Butter
  • 1 Tbsp Vanilla
  • 1/2 Cup Coconut oil (melted)
  • 2 Cups Powdered Sugar
  • 1 tsp Salt
  • 1 Bag Semi Sweet Chocolate Chips
  • Sea Salt to sprinkle on top

Preparation

Step 1

Melt coconut oil in the microwave.
Add the peanut butter to the coconut oil and mix until well incorporated.
Add the salt & vanilla and mix again.
Starting with one cup, slowly sift in all the powdered sugar, using more or less than 2 cups, depending on the consistency of the mixture.

When all the powdered sugar is fully incorporated, roll the mixture into 1 1/2 inch balls, flatten with the palm of your hand and place them on a wax paper lined baking sheet.
Let the eggs chill in the fridge for a few hours.

When the eggs are fully chilled, melt the chocolate chips in the microwave for 30 seconds at a time, until it is completely melted and smooth.
Dip each egg in the melted chocolate and cover on both sides.
Sprinkle with sea salt and put them back into the fridge to chill.
You can store these in a tightly sealed container on the counter or in the fridge for longer.
