Ingredients
- 3/4 cup Flour
- 3/4 cup Unsweetened Cocoa Powder
- 1/2 teaspoon Baking Soda
- 1/2 teaspoon Salt
- 3/4 cup Unsalted Butter, softened
- 1 cup Sugar
- 2 Eggs
- 1 teaspoon Vanilla
- 1-1/2 cups Andes Creme de Menthe Baking Chips plus more for sprinkling on top
Preparation
Step 1
Mix dry ingredients together in a bowl.
Cream butter and sugar in another bowl, add eggs and vanilla.
Mix in dry ingredients. Add the mint chips.
Drop by tablespoonfuls on ungreased cookies sheets, 3 inches apart, and bake in a 375 degree oven about 12 minutes, or until tops are puffed and set.
Cool on rack.
Note: These cookies really spread out during baking. Leave enough space for them to double in width.
