Ingredients
- 5 t0 6 medium yellow summer squash
- 1/2 sweet onion, such as vidalla
- 1 tbsp water
- salt and pepper to taste
- 1 can evaporated milk
- butter
Preparation
Step 1
Preheat oven to 350 degrees. Slice squash in half lengthwise. Place cut side up in 8 x 8 glass baking dish. Thinly slice onion and sprinkle over squash. Add water and cover with plastic wrap. Make a small slit in plastic wrap and microwave 4-5 min. until slightly cooked. Uncover and drain off any liquids. Level off squash in pan, sprinkle with salt and pepper, and pour just enough evaporated milk over squash to come to the top of squash. Do not completely cover. Dot with butter and bake until cooked through and lightly browned, about 35 to 40 min.
