Ingredients
- 2 eggs, hard boiled, cooled
- 2 ounces ham, serrano or prosciutto
- 1 8 ounce baguette or other white bread
- 1 large garlic clove, minced
- 1 lb. tomatoes, peeled, sliced, seeded
- 1 cup oil
- 1/4 cup red wine vinegar

Preparation
Step 1
Cut off hard crust of bread and cut into 1/2 " slices
Pour 1/4 " water into large baking dish.
Add bread. Soak 30 minutes. Squeeze excess water and put in blender.
Add garlic, tomatoes, vinegar and process
Slowly add oil until smooth.
Refrigerate.
Dice ham and quarter eggs and serve on top.
