Cabbage Salad with Orange Custard Dressng

An old-fashioned cabbage salad with fruit and a sweet orange dressing

Ingredients
- For Orange Custard Dressing:
- 2 c. shredded green cabbage
- 1 Golden Delicious Apple, cored and chopped
- 1 orange, peeled, seeded and chopped
- 1/2 c. sliced celery
- 3/4 c. Orange Custard Dressing
- 3 egg yolks
- 1/2 c. sugar
- 1/2 c. orange juice
- 5 T fresh lemon juice
- 1/2 c. heavy cream
Preparation
Step 1
1. Prepare the Orange Custard for the dressing. Set aside to cool. (See below)
2. Combine apple, orange, celery and cabbage. Toss well and chill.
3. Just before serving, finish the dressing. Toss the salad with 3/4 c. dressing (more, to taste) and serve.
For Orange Custard Dressing (makes 1 1/2 c.)
1. Prepare the Orange custard: combine sugar, orange juice, and lemon juice in a small heavy saucepan. Bring to a boil.
2. Lightly beat the egg yolks. Add a ladleful of hot oj mixture to the egg yolks to temper, then pour the yolks back in the pan. Cook over low heat until thickened, about 5 min. Stir constantly. Set aside to cool; chill in fridge.
3. At serving time, beat the cream until stiff. Fold the orange custard into the whipped cream and pour on the salad.
