Cheesy Ham and Pasta Casserole

One-dish skillet meal of spaghetti with ham, tomatoes and cheese.

Ingredients
- Canola or other mild vegetable oil
- 1 small onion, chopped
- 1/2 green bell pepper, chopped
- 1-2 garlic cloves, minced
- 8 oz. ham, chopped
- 1 14 oz. can diced tomatoes
- 1 14 oz. can Hunts Stewed tomatoes
- 1/2 lb. spaghetti or angel hair pasta, cooked according to package directions
- 1 c. finely shredded cheddar cheese
Preparation
Step 1
Heat a large skillet over medium heat and add enough canola or vegetable oil to cover the bottom of the skillet.
Add the onion and bell pepper to the pan and saute until translucent and fragrant, about 6 minutes. Add the minced garlic and diced ham. Increase the heat slightly and saute, stirring, until the ham begins to brown, about 5 minutes.
Add both cans of tomatoes and stir well.
Add the pasta to the skillet and toss thoroughly with the rest of the ingredients. Add salt and black pepper to taste. Cover and simmer 2-3 minutes to blend the flavors.
Sprinkle the cheese over the top of the pasta and cook, covered, for 2-3 minutes or until the cheese melts. Divide the pasta into 4 servings using the edge of a spatula or a knife.
