  • 1 cup cake flour
  • 1 tsp sugar
  • 1/2 tsp salt
  • 1/4 tsp baking powder, dbl acting
  • 1/2 tsp baking soda
  • 1 egg
  • 1 cup buttermilk
  • 1-2 Tbsp melted butter

Step 1

1. Sift the cake flour. To the flour, add the sugar, salt, baking powder and baking soda. Re-sift the flour with the rest of the dry ingredients.

2. In another bowl, beat the egg until light. Add the buttermilk and melted butter.

3. Combine the sifted and the liquid ingredients with a few swift strokes.

Test the griddle before cooking, by letting a few drops of cold water fall on it. If the water bounces and sputters, the griddle is ready to use. If water just sits and boils, not hot enough. If water vanishes, it's too hot
