These Cheese Burrito Omelet Wraps may be wrapped with parchment paper or plastic wrap and kept fresh refrigerated or frozen for a microwave ready anytime meal or snack. Try adding a couple spoonfuls of chili to “beef it up” if desired!

Ingredients

  • SPECIAL EQUIPMENT:
  • 2 large eggs
  • 2 tablespoons water
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 2 teaspoons butter
  • 1/2 cup Colby Jack cheese, shredded
  • 1 cup lettuce, shredded
  • 4 tablespoons salsa
  • 2 tablespoons sour cream, optional
  • 2 sprigs fresh cilantro, optional for garnish
  • 10 inch non-stick pan

Preparation

Step 1

Put the eggs, water, salt and pepper in a bowl and whisk until frothy.

Melt 1 teaspoon of the butter in the pan over medium-high heat, pour in half of the egg mixture and let cook for 1 to 2 minutes. Turn the egg wrap over and let cook for another minute until done.

Remove from heat, sprinkle with half the cheese, lettuce, salsa and sour cream and roll up like a burrito. Serve hot garnished with a sprig of fresh cilantro if desired. Repeat the process with the remaining ingredients to make a second wrap.
