Ingredients

  • 1 ) 16 oz Low Fat Cottage Cheese
  • 1 ) 10 oz frozen Chopped Spinach - thawed & drained (can substitute with Broccoli or Cauliflower)
  • 1 ) 7 oz jar of roasted Red Pepper (drained & chopped)
  • 1 Cup Low fat or Fat free Mozzarella Cheese - shredded
  • 1/3 Cup Parmesan Cheese - grated
  • 4 Eggs - well beaten
  • 1 tsp Oregano

Preparation

Step 1

Mix all ingredients well and pour into a 9 inch pie plate.

Cook for 40 minutes at 350` degrees or until center (eggs) are set.

You can add garlic powder, salt & pepper to taste, if desired
