Ingredients

  • 8- 1 inch thick pork chops
  • 1 tbsp butter
  • 3 large onions, sliced
  • 1 cup guinness stout
  • 1 tbsp dried mustard
  • 1 1/2 tsp balsamic vinegar
  • all purpose flour
  • 1 tbsp oil
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tbsp chopped fresh parsley
  • salt and pepper to taste

Step 1

Season pork with salt and pepper. Roll in flour and shake off excess. Melt butter with half the oil in a large fry pan. Add pork in bahches and brown well, about 6 min. per side. Set aside. Drege onions in flour and shake off excess. Saute onions and garlic in remaining oil. Cover and cook for 8 - 10 min stirring occasionally. Add 1/4 cup stout and 3/4 cup broth and bring to boil, scraping up any brown bits. Ruturn pork to pan. Add enough broth to bring liquid halfway up the sides of pork, cover and let simmer 20 min. Turn pork and cook this side 25 min. Transfer pork and onions to a platter. Boil pan juices til slightly thicken, about 10 min. Whisk in the mustard, parsely and the vinegar. Pour over chops and serve.
