- 1 green bell pepper, cut into thin strips
- 1 medium onion, thinly sliced
- 2 T olive oil
- 14.5 oz can diced tomatoes with garlic & onion
- 1 to 2 lbs uncooked Italian sausage
- 1 c water

Step 1
Sauté pepper & onions in oil in med hot skillet, 5-10 mins until browned. Stir in drained tomatoes reserving juice; cook until heated. Remove tomato mix from skillet & set aside. Brown sausage in skillet over med heat 5 min on each side. Add reserved tomato juice & 1 c water; bring to boil. Cover; reduce heat, & simmer, 20 mins until thoroughly cooked. Discard liquid. Cut sausage into bite-sized pieces. Top with tomato mixture.
