Grilled Onion Marmalade

Ingredients
- 6 red onion -- cut in rings
- 3 yellow onion -- cut in rings
- 4 white onion -- cut in rings
- 3 jalapeno pepper -- whole -- minced
- 2 tablespoons garlic clove -- minced
- 1 1/2 cups simple Sugar Syrup
- 3/4 cup malt vinegar
- 1/2 cup fresh sage -- chopped
- 1/4 cup fresh thyme -- chopped
- cumin -- ground, to taste
- kosher salt, to taste
- cracked black pepper, to taste
- 2 limes -- juice
- canola oil

Preparation
Step 1
in large stainless steel bowl, combine all of the onion rings.
Drizzle with canola and season with salt and pepper.
Grill onions. Once grilled, set aside to cool.
Saute jalapenos and garlic in canola oil and add simple syrup, and bring to a boil.
Reduce heat and add herbs and spices, malt vinegar, and reduce by 1/4.
Add onions and let reheat. Season with salt and pepper to taste.
Finish with lime juice and let stand to let flavors marry.
