Ingredients

  • Preparation time' 15 minutes
  • Baking Time: 20 minutes
  • 2 c AP flour
  • 1/2 c white sugar
  • 1 Tbsp baking powder
  • 1.5 tsp salt
  • 0.5 tsp baking soda
  • 227 g pkg cheddar cheese, about 2 c grated
  • I cup plain yogurt
  • 1/4 c melted butter
  • 2 eggs, beaten
  • Apple Butter
  • 1 /c c butter, softened
  • 1/2 c apple jelly
  • 1/4 tsp cinnamon

Preparation

Step 1

1. Preheat oven to 400F. Line large muffin cups with paper liners or grease well.
2. Place flour, sugar, baking powder, salt and baking soda in a large bowl. Stir with a fork until blended. Then gradually stir in cheese until evenly mixed. Make a well in centre of mixture.
3. In a small bowl, whisk yogurt, melted butter and eggs. Add to dry ingredients all at once. Stir until evenly moistened. Spoon into muffin cups. (Batter will be very thick)
4. Bake in centre of oven for 18 to 20 minutes or until golden. Muffins will keep in the refrigerator for several days and freeze well.

5. To make apple butter, beat butter until creamy. Beat in jelly and cinnamon til blended. A small hand-held mixer works well. Serve with warm muffins.
