MEXICAN CHICKEN BREASTS

Ingredients
- CHICKEN BREADING:
- 1/2 cup oatmeal
- 1 tbsp minced parsley
- 3/4 tsp chili powder
- 3/4 tsp paprika
- 3 tbsp melted butter
- 4 chicken breasts
- CHICKEN TOPPING:
- 2 medium tomatoes, coarsley chopped
- 1/2 cup chopped green pepper
- 1/4 cup chopped onion
- 2 tbsp minced parsley
- 1 garlic clove, minced
- 1 tbsp lemon juice

Preparation
Step 1
Place oats, parsley, powder and paprika in food processor. Process about 1 minute. Coat chicken breasts with dry topping and brush with margarine.
Bake at 425 for 40 minutes.
Combine remaining ingredients to create a salsa. Serve on top of chicken.
